4 eggs
4 tbsp sugar
2 cups mascarpone cheese
A pinch of salt
5 oz sponge biscuits
10 oz coffee
Cocoa powder


  1. Beat the egg yolks with the sugar, then fold in the mascarpone.
  2. Beat the egg whites with a pinch of salt to a stiff peak, and fold into the mascarpone mixture.
  3. Soak the biscuits in coffee and arrange in a serving bowl, alternating layers of biscuit and mascarpone cream.
  4. Sprinkle with cocoa and refrigerate. Serve well chilled, spraying the Grappa directly onto individual portions.
